For 4 people, you will need the following:
400 gr Screw paste 3 spoonfuls Olive oil 1 clove Crushed garlic 2 spoonfuls Chopped ginger 1 Carrot peeled and chopped 1/2 Chopped onion 1 Small green pepper and chopped 1 Small yellow pepper and chopped 200 gr Mushrooms in cubes 300 gr Tomatoes in small cubes 2 spoonfuls Tomato puree 1 spoonfuls Oregano finely chopped 1 spoonfuls Rosemary finely chopped 150 gr Spinach chopped 50 gr Butter
PROCEDURE: Cook pasta in 4 liters of boiling water until al dente. Add garlic, ginger, carrot and onion and cook for 5 minutes or until onion is soft and spicy, stirring constantly. Add the mushrooms, tomato and tomato puree and cook over low heat for 15 minutes. Add spinach and cook another 2 minutes or until soft. Stir until fully integrated. Season with salt and pepper and serve hot.
Another Vegetarian Pasta Recipe (From Mexico)
This is a dish that was shared by a reader from Mexico. It tastes pretty good.
The ingredients in one of our favorite vegetarian recipes are simple and easy to get:
Pasta. It can be long or short but, with spaghetti it looks pretty good.
Vegetables: Red or green pepper, carrot, onion and broccoli.
One or two cloves of garlic.

The first thing you have to do in these recipes for vegetarians is to cook the pasta separately; at the moment you put the pasta you can put a pot of water to boil for the broccoli so that everything is ready in good time.
To make sure the pasta looks perfect, check the instructions on the package and you will know how to prepare pasta depending on whether you like it firmer or not.
Pasta sauces usually contain too many calories or there are also industrialized pasta sauces that you can easily substitute for homemade ones made with fresh ingredients.
Vegetarian pasta: With the water almost boiling, add the broccoli
When the water is about to boil you put the broccoli about 5 minutes, the perfect point is when the color is much more alive and still a little crispy… If we overcook it it loses properties.
When the spaghetti is ready, remove the water and add a dash of olive oil so that it doesn’t stick while everything is ready. Also, if you have too many, you can keep them in the fridge and they won’t stick either, so that’s how you can prepare pasta for several days and it can help you with your routines.
This is a dish that is very well prepared in a wok, but if you don’t have one, it can be in a pan with some depth. To make the vegetables, put a splash of olive oil and chopped garlic in the wok or pan, sauté a little bit and then add the paprika, carrot and onion cut into strips (the broccoli is for the end). While stirring the vegetables a little, add one or two spoonfuls of brown sugar and a dash of soy sauce to hydrate them so that you have the best pasta sauces, which are also light.
Vegetarian pasta: Prepare the ingredients you want to add
When you see that the vegetables are soft, but still crunchy, you can add the spaghetti to the pan and stir everything. Here you will decide whether to add a little more soy sauce and sugar according to the flavor you want or pasta sauces you like and mix everything up.
