I found this great recipe for potato, ham and cheese croquettes from my aunt. It is a great way to serve croquettes that will surprise all of your guests. The dish is perfect for the little ones and for sharing at guest tables. My kids loved it and yours will too!
INGREDIENTS for about 20 croquettes (depending on size)
You will need the following ingredients to create this recipe:
500 g cooked potatoes
100 g of grated cheese
75 g of Serrano ham, finely diced. You can replace it with fine cubes of cooked ham or chorizo. You can also use finely chopped bacon sauteed in its own fat for a minute.
40 g of butter
Finely chopped parsley
Salt and pepper
Preparing your potato, ham and cheese croquettes

Put the cooked potatoes in a bowl and mash them with a fork until they are reduced to a purée.
Add the melted butter, one egg, grated cheese, ham and chopped parsley. Add salt and pepper to taste and mix well until it is integrated. Test the salt and bear in mind that the sausage will already add enough salt to the mixture.
With two spoons we take portions of dough and shape the croquettes.
We pass them through flour, beaten egg and breadcrumbs and place them on a tray.
Fry the croquettes in hot oil until they are golden. Serve immediately, very hot, although they are also very good when cold.
