This week I’m going to teach you how to make salmon with avocado sauce. A very simple and easy recipe but very-very tasty. We will enjoy the properties of this delicious and nutritious fish with an unusual shape, accompanied by an avocado sauce. Ideal for those of us who like to take care of ourselves, eat well and be well fed but without taking in too many calories. Yes, I know you will tell me that the avocado “fattens”, and it is true, since it has more calories than many other fruits, but it does not have to fatten us, if we eat it in moderation (like many other things) since we can take advantage of the multiple nutritional benefits it provides, since it is rich in oleic acid, fiber, vitamins C and D and folic acid, among others. It can be eaten in a variety of ways, both in sweet and savoury recipes and, due to its creaminess, it is very suitable for spreading on bread and crackers. The most popular dish made with avocados is well known: guacamole.

On the other hand, we have the fresh salmon, which is a so-called “blue” fish and which is quite fatty. But it is one of the fats considered “good” because it contains Omega 3 whose consumption is highly recommended for its many benefits to our health. Other nutritional properties are: vitamins of the group B, magnesium, iodine, iron… in short, that it is one of the healthiest fish!

I have brought together in a single dish 2 ingredients (which I love both) wonderful, full of flavor and health, which maybe you miss (you are shocked) to see them together but I tell you that they seem to have been “born” for each other because together they go perfectly. Salmon with Avocado Sauce, Ingredients for Two:
2 loins of fresh salmon (without skin or bones) 1 medium ripe avocado Half a spring onion, a few drops of lemon a few drops of Tabasco 1 pinch of paprika, 1 pinch of cumin powder 1 sprig of parsley (or coriander) salt and pepper 2 tablespoons of olive oil

Salmon with avocado sauce, preparation:
– In a small bowl, mix the paprika, cumin, salt, pepper, olive oil and a few drops of Tabasco. Mix well. Spread the salmon loins with this mixture. Leave to macerate. Reserve – Put the frying pan to heat (without oil, since it is already smeared on the salmon) and, meanwhile, open the avocado. Add a few drops of lemon, put it on a plate and mash it with the help of a fork. – Peel and chop the onion and chop the parsley too. Add it to the avocado puree and mix well. Add a pinch of salt and a few drops of oil. – Grill the salmon loins. When they are at your taste, cover with the avocado sauce, decorate and serve.

Comments: – I have used fresh salmon, but if it is more convenient for you to use frozen (it is also of very good quality), do not hesitate to do so with it, even if it has been previously defrosted. – If you have red onion (purple) instead of the spring onion I indicate in the ingredients, you can use it. – When you add the spicy (Tabasco) do it with moderation. Adding it is always on time, on the contrary, if you go too far, it will be inedible and you will spoil the dish.
